  • 1 kg Aberdeen Angus braising beef
  • 2 large onions
  • 3 garlic cloves
  • 500 ml red wine
  • 700 ml beef stock
  • 2 large carrots
  • 2 medium potatoes
  • ½ small swede (rutabaga)
  • Fresh thyme sprigs

Instructions

  1. Preheat oven to 160°C (325°F).
  2. Heat vegetable oil in a Dutch oven; brown seasoned beef for 7–8 minutes.
  3. Add chopped onions; cook until softened, then add garlic.
  4. Stir in red currant jelly and red wine; simmer for 5 minutes.
  5. Add carrots, potatoes, swede, beef stock, tomato puree, Worcestershire sauce, bay leaves, sugar, salt, and pepper.
  6. Bring to a gentle boil; cover and transfer to the oven.
  7. Cook for 3–4 hours until beef is tender.
