  • 2 pounds boneless skinless chicken thighs
  • 1/2 cup plain yogurt
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1-inch ginger root, peeled and minced
  • 1 tablespoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili powder
  • 1 teaspoon salt
  • 2 tablespoons olive oil, for cooking
  • 1 onion, diced
  • 2 cups tomato purée
  • 1/2 cup heavy cream
  • 2 tablespoons butter or ghee

Instructions

  1. In a large bowl, combine yogurt, garlic, ginger, garam masala, and salt. Add diced chicken and coat well. Marinate for at least 10 minutes (or up to 12 hours in the fridge).
  2. Heat olive oil in a skillet over medium-high heat. Sear marinated chicken for 1–2 minutes until browned.
  3. Transfer seared chicken to the slow cooker along with any remaining marinade, onions, and tomato purée. Stir to combine.
  4. Cover and cook on high for 4–5 hours or low for 7–8 hours until chicken is tender.
  5. Stir in heavy cream and melted butter before serving.
