  • 3 slices fresh galangal (or ginger)
  • 1 stalk lemongrass (pounded and cut)
  • 10 lime leaves (optional)
  • 1 tablespoon red Thai curry paste
  • 4 cups chicken broth
  • 2 cans full-fat coconut milk
  • 1 pound chicken breasts (cubed)
  • 8 ounces sliced white mushrooms
  • Brown sugar, fish sauce, lime juice, green onions, cilantro for garnish

Instructions

  1. Combine onion, garlic, jalapeño, galangal, lemongrass, lime leaves, curry paste, and chicken broth in the slow cooker.
  2. Cook on HIGH for 3 hours or LOW for 6 hours.
  3. Strain solids using a slotted spoon.
  4. Add coconut milk, chicken, and mushrooms; stir well.
  5. Cook on HIGH for an additional hour or LOW for 2 hours.
  6. Stir in brown sugar, fish sauce, and lime juice; adjust seasoning to taste.
  7. Serve hot garnished with green onions and cilantro.
