1 cup salted butter (softened)
1 and 1/3 cup granulated sugar
1/3 cup brown sugar (packed)
2 large eggs
2 teaspoons vanilla extract
3 and 1/4 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon kosher salt
1 and 1/2 teaspoons cream of tartar
1/3 cup granulated sugar (for coating)
1 and 1/2 tablespoons cinnamon (for coating)
Instructions
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large bowl or stand mixer, beat softened butter until smooth. Add granulated and brown sugars, beating until light and fluffy.
Incorporate eggs one at a time along with vanilla extract, mixing well.
In another bowl, combine flour, baking soda, kosher salt, and cream of tartar. Gradually add dry ingredients to wet mixture until just combined.
Using a cookie scoop, form dough balls about 1 and 1/2 inches wide. Roll each ball in cinnamon sugar mixture.
Place on prepared baking sheets, leaving space between each cookie. Bake for 9-11 minutes until edges are set but centers are slightly shiny.
Cool for a few minutes on the pan before transferring to a wire rack.
