  • 1⅔ cups (375g) warm water
  • 1 cup (200g) active sourdough starter
  • 2 teaspoons (10g) salt

Instructions

  1. In a large mixing bowl, combine flour and warm water until a shaggy dough forms. Let it rest for 30 minutes.
  2. Add sourdough starter and salt; mix well.
  3. Cover and let rise at room temperature, performing stretch and folds every 30 minutes for two hours.
  4. After the final fold, cover again and allow to rise for 6 to 8 hours until doubled in size.
  5. Shape the dough on a floured surface, then place it seam-side up in a proofing basket. Refrigerate for 8 to 12 hours.
  6. Preheat your Dutch oven to 450°F (232°C). Score the dough before baking.
  7. Bake covered for 20 minutes, then uncovered for another 25 minutes until golden brown.
  8. Cool completely on a wire rack before slicing.
