  • 3 tbsp toasted sesame oil
  • 3.5 oz shiitake mushrooms
  • 4 garlic cloves
  • 1 tbsp fresh ginger
  • 4 cups chicken or vegetable broth
  • 1 can (14 oz) full-fat coconut milk
  • 2 tbsp Thai red curry paste
  • 9 oz instant ramen noodles
  • Optional toppings: boiled eggs, chili oil, sesame seeds, chives

Instructions

  1. Prep the ingredients: Grate garlic and ginger, and tear shiitake mushrooms.
  2. In a large pot, heat 1 tbsp sesame oil over medium heat. Sauté shiitakes until browned; remove and set aside.
  3. Reduce heat to low; add remaining sesame oil, garlic, and ginger. Cook until fragrant.
  4. Deglaze with broth; bring to a boil. Stir in turmeric, brown sugar, soy sauce, fish sauce, curry paste, and coconut milk.
  5. Add ramen noodles; cook for 2 minutes. Serve immediately topped with shiitakes and your choice of garnishes.
