  • 1 tbsp harissa paste
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 4 slices multi-seed or whole grain bread
  • 100 g whipped almond cheese
  • 2 tbsp pistachios (roughly chopped)
  • 1 handful arugula
  • Optional: lemon zest or a drizzle of lemon juice

Instructions

  1. Preheat the oven to 200°C (390°F).
  2. Toss carrot sticks in a mixing bowl with harissa paste, olive oil, salt, and pepper until well coated.
  3. Spread the carrots evenly on a baking tray and roast for 20–25 minutes, turning halfway through until tender.
  4. If desired, toast the bread slices.
  5. Assemble the sandwich by spreading almond cheese on one slice of bread, adding arugula, warm roasted carrots, chopped pistachios, and optional lemon zest before topping with another slice of bread.
  6. Cut in half and serve warm or at room temperature.
