  • 24 shallots
  • 2 and 1/4 pounds beef chuck
  • 1/2 cup olive oil
  • 4-6 garlic cloves
  • 1 (28oz) can crushed tomatoes
  • 2 tablespoons red wine vinegar
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 2 bay leaves
  • 1 cinnamon stick
  • 2-3 whole cloves
  • 4-6 peppercorns
  • 1/2 teaspoon sugar
  • salt and pepper to taste
  • 1 and 1/2 cups water
  • pinch red pepper flakes

Instructions

  1. Sauté shallots in olive oil over medium heat until golden brown, about 5-10 minutes. Remove and set aside.
  2. In the same pot, brown beef in batches for optimal searing.
  3. Add garlic and cook until fragrant. Stir in tomato paste before incorporating the remaining ingredients except shallots.
  4. Bring to a boil then simmer uncovered for 1 hour and 15 minutes until beef is tender.
  5. Season to taste and gently add back shallots. Simmer for an additional 30 minutes.
  6. Serve warm with your choice of sides.
