  • 1 ½ pounds ground beef
  • ¾ cup Italian style breadcrumbs
  • 12 ounces wide egg noodles
  • ½ cup butter
  • 4 cups low-sodium beef broth
  • ½ cup sour cream
  • ½ cup heavy cream
  • 2 Tablespoons olive oil
  • 1 Tablespoon dried parsley flakes
  • 1 teaspoon minced garlic
  • ½ cup finely minced onion
  • 1 egg (beaten)
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat oven to 375°F.
  2. Cook noodles according to package instructions until al dente; drain and set aside.
  3. In a large bowl, mix ground beef, breadcrumbs, parsley flakes, minced garlic, onion, beaten egg, salt, and pepper until combined. Shape into 20–24 meatballs.
  4. Brown meatballs in olive oil over medium-high heat; set aside.
  5. In the same skillet, melt butter and whisk in flour to create a roux. Gradually add beef broth and cook until thickened. Stir in sour cream and heavy cream.
  6. In a casserole dish, layer cooked noodles, top with meatballs, and pour gravy over.
  7. Bake for 20–25 minutes until heated through.
