  • 2 large eggs
  • ½ teaspoon garlic powder
  • salt and pepper (to taste)
  • 3 tablespoons rice vinegar
  • ⅓ cup brown sugar (packed)
  • 1 cup chicken broth (low sodium)
  • ⅓ cup ketchup
  • 1 tablespoon tomato paste
  • ¼ cup pineapple juice (from canned pineapple)
  • ½ teaspoon cornstarch
  • 1 teaspoon salt
  • 1 tablespoon vegetable oil
  • 1 large onion (diced)
  • 2 cloves garlic (minced)
  • 1 medium red bell pepper (cut into 1-inch pieces)
  • 1 medium green bell pepper (cut into 1-inch pieces)
  • ½ cup pineapple chunks

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, onion, eggs, garlic powder, salt, and pepper; mix until just combined. Form into golf ball-sized meatballs.
  2. Cook meatballs in an air fryer at 380°F for 10 minutes or bake on a lined sheet at 400°F for 20-25 minutes until cooked through.
  3. In another bowl, whisk together rice vinegar, brown sugar, chicken broth, ketchup, tomato paste, pineapple juice, and cornstarch for the sauce.
  4. In a large pan or wok, heat vegetable oil over medium-high heat. Stir-fry onions and bell peppers for 1 minute; add minced garlic and cook for another 30 seconds.
  5. Add the prepared sauce to the pan and stir until thickened. Toss in cooked meatballs and pineapple chunks; heat through for 2 minutes.
  6. Serve immediately over rice or noodles.
