  • 500 grams mini meatballs (pre-cooked)
  • 250 grams diced fresh pineapple
  • 1 onion (sliced)
  • 1 red capsicum (bell pepper)
  • 4 spring onions
  • 90 grams brown sugar (1/2 cup packed)
  • 45 millilitres white vinegar (3 tablespoons)
  • 30 millilitres tomato ketchup (2 tablespoons)
  • 15 millilitres light soy sauce (1 tablespoon)
  • 80 millilitres pineapple juice (1/3 cup)
  • 1/4 teaspoon Chinese five spice powder
  • 2 teaspoons cornflour, mixed with 2 tablespoons water

Instructions

  1. In a saucepan over medium heat, combine brown sugar, vinegar, ketchup, soy sauce, pineapple juice, and five spice; simmer until sugar dissolves.
  2. Stir in cornflour mixture and simmer until thickened. Remove from heat.
  3. Heat vegetable oil in a large wok; add mini meatballs and cook until nearly done.
  4. Add onion; stir-fry for 2 minutes followed by red capsicum for another minute.
  5. Mix in pineapple and sweet and sour sauce; stir-fry until all ingredients are heated through.
  6. Toss through spring onions and serve hot over rice.
