  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons instant espresso powder, dissolved in hot water
  • 1 cup mascarpone cheese, chilled
  • 1/2 cup heavy cream, cold
  • 1/4 cup powdered sugar
  • Unsweetened cocoa powder for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the egg, vanilla extract, and dissolved espresso until combined.
  4. In a separate bowl, sift together flour, cocoa powder, baking soda, and salt before gradually adding to the wet mixture.
  5. Scoop small balls of dough onto prepared sheets; flatten slightly.
  6. Bake for 8–10 minutes or until edges are set; cool on wire racks.
  7. For the filling, whip mascarpone cheese with heavy cream, powdered sugar, and vanilla until stiff peaks form.
  8. Assemble cookies by spreading filling between two cookies; dust with cocoa powder.
