  • 115 g unsalted butter (softened to room temperature)
  • 100 g granulated sugar
  • 50 g brown sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 200 g mascarpone cheese
  • 100 g whipping cream
  • 50 g powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, espresso powder, baking powder, baking soda, and salt. Whisk together.
  3. In another bowl, cream the softened butter with granulated and brown sugars using an electric mixer until fluffy. Add the egg and vanilla extract; mix well.
  4. Gradually add the dry ingredients; mix until just combined.
  5. Scoop dough onto a lined baking sheet, spacing them about 2 inches apart. Bake for about 12 minutes until edges are golden but centers remain soft.
  6. Let cool before transferring to a wire rack.
  7. For the cream topping, beat mascarpone cheese, whipping cream, powdered sugar, and vanilla extract until soft peaks form.
  8. Spread or pipe the mascarpone topping on cooled cookies and dust with cocoa powder before serving.
