  • 2 (15 oz.) cans butter beans, drained and rinsed
  • 2 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1/2 cup organic sundried tomatoes
  • 1 tablespoon organic tomato paste
  • 2 tablespoons Tuscan Marry Me blend
  • 1 cup organic heavy cream (or coconut cream for vegan)
  • 1 cup chopped kale
  • Freshly squeezed juice of 1/2 lemon
  • Freshly grated parmesan for garnish

Instructions

  1. Melt the unsalted butter in a large skillet over medium heat. Add the minced garlic and sauté until fragrant (about 1 minute). Stir in the sundried tomatoes and cook for another 2 minutes.
  2. Add the rinsed butter beans along with the Tuscan Marry Me blend and sea salt. Stir gently until well combined.
  3. Pour in the heavy cream (or coconut cream), vegetable stock, and white cooking wine (optional). Simmer on low heat for about 5 minutes until thickened.
  4. Fold in the chopped kale and cook until wilted (about 2 minutes). Finish by squeezing fresh lemon juice before serving.
  5. Serve warm with freshly grated parmesan on top.
