  • 2 yellow onions, thinly sliced
  • Water, for deglazing the pan
  • 5 cloves garlic, sliced
  • 2 tsp Italian seasoning
  • 1/2 tsp red pepper flakes, optional
  • 1/4 cup julienned sun-dried tomatoes, jarred packed in oil
  • 2 tbsp balsamic glaze
  • 1 tbsp soy sauce
  • 1/2 cup store bought or homemade vegan cream
  • 2 cups dry Orecchiette pasta or 4 servings of favorite pasta (plus 1 cup reserved pasta water)
  • 1/4 cup freshly minced parsley
  • Salt and pepper to taste

Instructions

  1. Prepare a large pot of salted water for boiling pasta and set aside.
  2. In a large skillet over medium heat, warm olive oil and add sliced onions with a pinch of salt. Sauté for about 5 minutes until they begin to brown.
  3. Deglaze the pan with water as needed, then continue cooking onions until deep golden brown (about 15 minutes).
  4. Add sliced garlic, Italian seasoning, and red pepper flakes; sauté for another 3–4 minutes.
  5. Boil the pasta according to package instructions while reserving 1 cup of pasta water before draining.
  6. Stir in sun-dried tomatoes, balsamic glaze, soy sauce, vegan cream, and half a cup of reserved pasta water into the skillet with onions.
  7. Fold in cooked pasta and minced parsley, adjusting creaminess with more reserved water if desired.
