  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 3 tablespoons cornstarch
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons neutral oil for cooking
  • Green onions
  • Sesame seeds

Instructions

  1. Press the tofu between clean kitchen towels for 15 minutes to remove excess moisture.
  2. Cut the pressed tofu into 1-inch cubes and coat with cornstarch.
  3. Heat oil in a large skillet over medium-high heat. Add tofu in a single layer and cook until golden brown on both sides.
  4. Remove the tofu and sauté sliced bell peppers and onion in the same pan until caramelized.
  5. Add minced garlic and ginger; stir for 30 seconds until fragrant.
  6. Toss in pineapple chunks and caramelize for 2–3 minutes.
  7. Mix soy sauce, rice vinegar, and maple syrup in a bowl; pour over the mixture in the skillet along with the crispy tofu. Stir gently for 2 minutes until everything is coated.
