  • 2 cans (15 ounces each) chickpeas, drained and rinsed
  • 3-4 large cloves garlic, minced
  • 1 tablespoon avocado oil or olive oil
  • 1.5 tablespoons toasted sesame oil
  • ⅓ cup tamari or soy sauce
  • 2 tablespoons maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon fresh grated ginger
  • ¼ cup vegetable broth
  • 1 tablespoon arrowroot powder or cornstarch

Instructions

  1. Drain and rinse the chickpeas thoroughly.
  2. Heat oil in a non-stick skillet over medium heat and sauté minced garlic until golden brown.
  3. In a small bowl, whisk arrowroot powder with vegetable broth and set aside.
  4. Add sesame oil, tamari, maple syrup, rice vinegar, ginger, and remaining broth to the skillet; whisk until combined.
  5. Stir in the arrowroot mixture and cook until bubbling to thicken the sauce.
  6. Add the chickpeas and stir until well coated; cook for another 5 minutes to absorb flavors.
  7. Let sit for 5 minutes before serving over your choice of rice or veggies.
