Ingredients

  • 2 cans (15 ounces each) chickpeas, drained and rinsed
  • 2 sheets nori
  • ⅓ cup vegan mayo
  • 1 tablespoon soy sauce
  • 1 tablespoon mustard
  • ½ medium red onion, chopped
  • 1 stalk celery, chopped
  • Juice of ½ lemon
  • Salt and black pepper to taste

Instructions

  1. Blend or finely chop nori sheets until shredded.
  2. In a mixing bowl, mash chickpeas until coarse in texture.
  3. Combine mashed chickpeas with nori, onion, celery, lemon juice, vegan mayo, soy sauce, mustard, salt, and pepper. Mix until creamy.
  4. Serve in lettuce wraps, on bread as a sandwich, or over salads.
