  • 100 g cold vegan butter
  • 300 g spelt flour
  • 250 g onions
  • 250 g potatoes
  • 125 ml ice-cold water
  • 5 tbsp soy milk (or oat milk)
  • 125 g vegan yogurt
  • 100 g vegan feta
  • Olive oil
  • Salt
  • Rosemary
  • Everything Bagel seasoning

Instructions

  1. Prepare the dough by combining cold vegan butter, spelt flour, and salt in a food processor until crumbly. Gradually add ice-cold water and soy milk until a dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  2. In a skillet, heat olive oil over medium heat and caramelize sliced onions with a pinch of salt for about 15 minutes.
  3. Thinly slice potatoes and set aside in cold water.
  4. Preheat oven to 200°C (390°F). Roll out chilled dough into a circle on parchment paper, spread caramelized onions evenly on top, layer with potato slices, sprinkle with seasonings, vegan feta, and dollops of yogurt.
  5. Fold the edges of the dough over the filling, creating pleats to secure. Bake for about 40 minutes until golden brown.
