  • 325 g flour
  • 215 g sugar
  • 1 packet vanilla sugar (8 g)
  • 3 tsp baking powder
  • ¼ tsp salt
  • 95 g neutral oil
  • 280 ml orange soda
  • 700 g mandarins (drained)
  • 400 ml vegan whipped cream
  • 300 g vegan crème fraîche
  • 32 g stabilizer (San-Apart)
  • 48 g vanilla sugar (6 packets)
  • 35 g sugar
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a large mixing bowl, combine flour, sugar, vanilla sugar, baking powder, and salt.
  3. Add neutral oil and orange soda to the dry ingredients; mix until smooth using a hand mixer.
  4. Pour the batter into a greased baking sheet (42 x 29 cm).
  5. Bake for 25-30 minutes or until a toothpick comes out clean.
  6. While the cake bakes, whip the vegan cream with stabilizer until stiff.
  7. In another bowl, mix vegan crème fraîche with vanilla sugar and cinnamon.
  8. Once cooled, spread mandarins over the cake base.
  9. Top evenly with whipped cream and refrigerate for at least two hours before serving.
