  • 1 cup cooked lentils
  • 8 ounces cremini mushrooms
  • 1 medium yellow onion
  • 2 cloves garlic
  • 1 cup plain breadcrumbs
  • ¼ cup fresh parsley
  • 2 tablespoons plant-based butter
  • 2 cups vegetable broth
  • ½ cup plant-based cream

Instructions

  1. Sauté chopped onions and garlic in olive oil until translucent.
  2. Add finely chopped mushrooms and cook until moisture is released.
  3. In a mixing bowl, combine the sautéed mixture with lentils, breadcrumbs, parsley, flax egg (or replacer), soy sauce, allspice, nutmeg, salt and pepper.
  4. Shape the mixture into small meatballs.
  5. Fry the meatballs until browned on all sides.
  6. Prepare the gravy by whisking flour into melted butter, then slowly adding vegetable broth and cream.
  7. Serve the meatballs topped with gravy and garnished with fresh dill.
