- 1/2 cup chopped pecans or walnuts
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1 3/4 cups non-dairy milk
- 2 flax eggs (2 tablespoons ground flaxseed + 6 tablespoons water)
- 1/2 cup pure maple syrup
- 1 teaspoon vanilla extract
- 1 cup blueberries
- 1 small sliced banana (for topping, optional)
- Preheat your oven to 350°F and grease a baking pan.
- Prepare flax eggs by mixing ground flaxseed with water; set aside.
- In a large bowl, mix rolled oats, nuts, cinnamon, baking powder, nutmeg, and salt.
- In another bowl, whisk together applesauce, non-dairy milk, flax eggs, maple syrup, and vanilla.
- Combine wet and dry mixtures gently; fold in fruit.
- Pour into the baking pan and bake for 35–45 minutes until set.
