  • 1 pound ground spicy Italian sausage
  • 3 garlic cloves, minced
  • 1 medium white onion, diced
  • 1.5 pounds Yukon Gold potatoes, diced
  • 5 to 6 cups chicken stock
  • 2 to 3 cups chopped fresh kale
  • 1 cup heavy whipping cream
  • fine sea salt and freshly-ground black pepper

Instructions

  1. In a large stockpot over medium-high heat, cook the sausage until browned. Remove sausage with a slotted spoon.
  2. Sauté diced onions in reserved grease for about 5 minutes; add garlic and sauté for another minute.
  3. Add potatoes, chicken stock, and cooked sausage back into the pot; bring to a simmer and cook until potatoes are tender (about 10 minutes).
  4. Stir in kale and heavy cream; simmer for an additional 5 minutes. Season to taste with salt and pepper.
